Maple Bacon Roasted Brussel Sprouts With Thyme

These maple bacon roasted brussel sprouts with thyme are a great compliment to your fall and winter table.

I feel like a good side dish helps make a meal shine. I love these brussel sprouts, they work great on a holiday table. In addition, they also work for a fall or winter side dish along side roasted meats. I find roasting vegetables to be an easy way to enhance their flavor like in these Maple Roasted Carrots.

Ingredients

Brussel Sprouts – You will need 1 pound of brussel sprouts, ends trimmed

Salt – Regular table salt

Black Pepper – Fresh ground pepper 

Olive Oil – Use your favorite extra virgin olive oil 

Bacon – You will need 3-4 strips of bacon

Thyme – Fresh thyme sprigs, you will need 5

Maple Syrup – Use pure maple syrup

Instructions

  1. Pre-heat the oven to 425°F.
  2. Line a baking sheet with parchment paper.
  3. Trim the ends off of the brussel sprouts, cut any large ones in half and place them into a large bowl
  4. Add the salt, black pepper, 2 tbsp of the maple syrup, and the olive oil to the brussel sprouts. Stir making sure the brussels sprouts are liberally and evenly coated in the olive oil.
  5. Place the brussel sprouts onto the lined baking sheet.
  6. Cut the bacon into bite size pieces and then sprinkle them over the brussel sprouts.
  7. Add the sprigs of fresh thyme to the brussel sprouts, scattering them around the baking pan.
  8. Roast the brussels sprouts for 15 minutes then stir and flip them over if needed. Bake another 10-15 minutes or until the brussel sprouts are fork tender.
  9. Once cooked discard the thyme sprigs and place the brussel sprouts onto a serving platter. Drizzle them with the remaining 1 tbsp of maple syrup. Sprinkle with sea salt flakes if desired.

Recipe Tip

Some of the loose leaves may char and that’s ok.

Make sure the brussel sprouts are coated in the olive oil so they become tender in the oven. If they are not liberally coated they may take a lot longer to cook.

Storage Tips

Store covered in the refrigerator for up to two days. Warm gently in the microwave or on the stovetop with a little bit of olive oil.

Materials

  • 1 lb Brussel Sprouts, ends trimmed Cut the very large ones in half so they are more even in size with the others if needed.
  • 1/2 tsp Sea Salt, fine
  • 1/4 tsp Black Pepper
  • 3 tbsp Extra Virgin Olive Oil
  • 3-4 Bacon Strips, cut into pieces
  • 5 sprigs Thyme, fresh can sub in 1/2 tsp of dried thyme
  • 3 tbsp Maple Syrup, divided
  • 1 pinch Sea Salt Flakes (optional)

Instructions

  • Pre-heat the oven to 425°F. Line a baking sheet with parchment paper.
  • Trim the ends off the brussel sprouts and cut any larger ones in half. Place them into a large bowl.
  • Add the salt, black pepper, olive oil and 2 tbsp of the maple syrup to the brussel sprouts. Stir and make sure they are evenly coated in the olive oil. Place them onto the baking sheet.
  • Cut the bacon into bite sized pieces and place them onto the baking sheet mixing them in with the brussel sprouts.
  • Add the thyme to the baking sheet, scattering them around and tucking them into the brussel sprouts.
  • Roast in the oven for 15 minutes then stir and roast and additional 10-15 minutes or until the brussel sprouts are fork tender.
  • Once cooked discard the thyme stems.
  • Place the brussel sprouts onto a serving platter and drizzle the remaining 1 tbsp of maple syrup over the top. Sprinkle with sea salt flakes if desired.

Notes
