Grilled Chicken with Caesar Marinade

An easy to make grilled chicken with caesar marinade, perfect for grilling season and family get togethers.

My mother-in-law stumbled up this recipe when she was doing her “gourmet group” as she called it. They would get together and make recipes from different sources. The original recipe uses turkey steaks but my family is not a bit fan of turkey so I substituted in chicken and it’s been a hit ever since.

This is such a good recipe. A few ingredients and a bit of time gives you the most tender and flavorful chicken. It’s great as is with a side of vegetables or you will love it in this Grilled Chicken Caesar Salad with Corn. You can use chicken thighs (boneless or bone-in), chicken tenders or even turkey steaks. I love that’s it’s a great addition to a barbecue especially if you want to change things up a bit. While the recipe calls for grilling, you can bake it if you need to.

Ingredients

Caesar Salad Dressing – You are looking for a vinegar based one not a creamy one. The two I have used successfully and should be easy to find are Ken’s Lite Caesar Salad Dressing and Neumans Own Caesar Dressing.

Dijon Mustard – You can use your favorite here. 

Garlic Clove – Minced or grated

Salt & Pepper – To taste

Chicken – You can use chicken thighs (boneless, skinless), tenders, or turkey steaks

Instructions

  1. In a measuring cup or medium size bowl add the salad dressing, dijon mustard, minced or grated garlic clove, salt and pepper.
  2. Place chicken in a bowl, roasting pan or plastic bag, then pour over the marinade to coat all the chicken pieces.
  3. Place a cover over the bowl and place in the refrigerator for at least an hour.
  4. Remove from the marinade (discard the marinade) and grill or bake until cooked through to 165°F.
  5. Place onto a platter and take some of the leftover dressing (not the marinade) and drizzle over the chicken and serve.

Chicken Tenders

Turkey steaks

It is not recommended to use chicken breast.

Materials

Chicken Marinade

  • 2/3 cup Caesar Salad Dressing Make sure it's not a creamy caesar salad dressing. See note below.
  • 1 large Garlic clove, minced
  • 1 tbsp Dijon Mustard
  • Salt & Pepper to taste
  • 1 1/2 lbs Boneless skinless chicken thighs, or tenders 4-6 chicken thighs

Instructions

Make Marinade

  • In a med bowl or measuring cup add caesar salad dressing, minced or grated garlic clove, dijon mustard, salt and pepper.
  • Place the chicken in a bowl or plastic bag and pour the marinade over the chicken making sure all the pieces are coated.
  • Marinade for at least one hour.
  • Remove chicken from marinade ( discard the marinade).
  • Grill until the internal temperature reaches 165℉.
  • Place grilled chicken on platter then drizzle with a bit of the leftover caesar salad dressing from the bottle.

Notes

I use Ken's Steak House Lite Caesar Dressing & Marinade. It has the best flavor for this recipe. I have also used Neuman's Own Caesar dressing with success.
Make sure the dressing is not the creamy one but vinegar based.
You can use bone in chicken thighs or turkey steaks.
Once chickens removed from marinade do not use the remaining marinade just throw it out for safety reasons.
Grilling is the preferred method but you can also bake it at 400°F for approx 30- 40 minutes depending on which cut of chicken you are using and your oven temps.
Store covered in the refrigerator up to 3 days.
