Maple Roasted Carrots
Simple ingredients make these maple roasted carrots the perfect side dish.
Roasting vegetables can be like magic, a few simple ingredients and the vegetables are tender, soft and so delicious. This carrot recipe is simplicity at its finest. Easy to make and you can choose whether to peel them or not.

Ingredients
Carrots – You can choose to peel them or not, just trim the ends off
Salt – Regular table saltÂ
Black Pepper
Olive Oil – Use a light olive oil
Maple Syrup – Use pure maple syrup
Fresh Thyme
Instructions
- Pre-heat the oven to 400°F.
- Place parchment paper onto a baking sheet, to prevent the carrots from sticking to the baking sheet.
- Wash, scrub, peel (optional), and trim the ends of the carrots and place them in a large bowl. If the carrots are large slice them down the middle lengthwise to make them more uniform in size for even roasting.
- Add the olive oil, salt, pepper, maple syrup, and fresh thyme to the bowl of carrots.
- Mix then evenly place on a baking sheet.
- Roast for 15 minutes then flip them. The ends may char a little bit and that’s ok.
- Roast for an additional 10-15 minutes or until the carrots are tender.
- Place on a serving platter and drizzle another tablespoon of maple syrup over top the carrots and sprinkle with some fresh thyme.

Storage
Store covered in the refrigerator for up to two days. Gently re-heat in the microwave or oven.
Maple Roasted Carrots
Materials
- 2 lbs Whole carrots, scrubbed and peeled. can leave peel on if desired.
- 1 tsp Salt
- 1/4 tsp Black Pepper
- 2 tbsp Olive Oil
- 2 tbsp Maple Syrup, plus 1 tbsp for drizzling
- 1/4 tsp Fresh Thyme, plus 1/2 tsp to sprinkle at the end.
Instructions
- Pre-heat oven to 400°F. Add parchment paper to a baking sheet and set aside.
- Scrub and and peel carrots and trim the ends. If the carrots are large slice them down the middle lengthwise so they are more uniform with the other carrots for even roasting.
- Place the carrots on the baking sheet and top with the olive oil, salt, pepper, maple syrup and fresh thyme.
- Mix it all together ensuring the carrots are evenly coated.
- Roast for 15 minutes then flip the carrots, they may start to char a bit and that's ok.
- Continue to cook another 15 - 20 minutes or until fork tender.
- Place on a platter, drizzle a tbsp of maple syrup over the top and sprinkle with more fresh thyme.
We added these carrots as a side for our Christmas dinner and they were the perfect addition! They were the perfect contrast of sweetness to our other vegetable sides and they were the first item to be completely eaten. Excited to add these into the regular rotation!
