Simple Veggie and Cheese Frittata
A simple veggie and cheese frittata that is perfect for a small family lunch.
When I find I have a ton of veggies in my fridge about to go bad I make a frittata. It’s perfect for using less than stellar veggies and if you add a favorite cheese makes it even better. This is the perfect dish if  you’re entertaining guests for a holiday or family lunch. In addition, you can pre-cook the vegetables the day before to reduce the cook time.
What Is A Frittata
Frittata is an egg based breakfast dish filled with your favorite pre-cooked vegetables. It starts cooking on the stove top and it’s finished in the oven.
The Difference Between An Omelette and A Frittata
Believe it or not there is a difference between and omelette and a frittata. An omelette is cooked only on the stovetop, and usually serves one person. The eggs are folded around whatever filling you choose. However, a frittata starts on the stove and is finished in the oven. The filling is usually cooked ahead of time, then mixed into the egg mixture. It can serve many people and can be served hot or room temperature.
What To Put Into Your Frittata
The best thing about a frittata is you can use your favorite veggies. If you are inspired you can even add some meats or cheeses. The base is a simple mixture of egg, milk/non-dairy milk, salt and pepper. If you have some fresh herbs you can add them also. Sautéing or roasting your vegetables before adding them to the egg mixture ensures that they will be tender once the frittata comes out of the oven.
How To Serve The Simple Veggie and Cheese Frittata
A frittata is cut into a wedge and served. It makes a great breakfast or light lunch and is especially delicious with a light simple salad served on top of it. The salad can consist of mixed greens and a light balsamic or Italian dressing. Another option is to pour the egg mixture into a muffin baking pan and bake smaller individual frittata’s for young kids or an on the go option. If you’re looking for something more substantial you can put the frittata in a roll with some lettuce and have it as a sandwich.
Simple Veggie and Cheese Frittata
Materials
- 6 large Eggs
- 1/4 cup Milk/Non-Dairy Milk
- 1 Red or green pepper, diced
- 3-4 Green Onions, sliced
- 1 cup Sliced Mushrooms (Optional)
- Small handful of spinach or kale
- 1/4 cup Sun-dried tomatoes, drained Can sub in 1/2 cup sliced cherry tomatoes
- 1 tsp Dried Parsley Can sub in 1T of Fresh
- 1/2 tsp Salt
- 1/4 tsp Fresh Black Pepper
- 1/2-3/4 cup Cheese such as, cheddar, mozzarella, fontina, brie, parmesan, etc (Optional)
Instructions
- Pre-heat oven to 400°F.
- In a 10-inch skillet sauté the pepper, onions, and mushrooms until tender.
- While veggies are sautéing, crack eggs into a medium size bowl, whisk in milk. Add in the sun dried tomatoes, parsley, salt, pepper, and the handful of spinach or kale. Stir and set aside.
- Once veggies are tender add the egg mixture to the pan and stir gently with a spatula to combine.
- Sprinkle evenly with the cheese.
- Transfer the skillet to the pre-heated oven and bake for approx 10 min or until the top is lightly browned.
- Remove from the oven and slice into wedges and serve.
