Chocolate Love Tin

I have a few chocolate lovers in my family and when they saw this Chocolate Love Tin they were so ready to dig in. The best thing about the Chocolate Love Tin is that not only did I bake some items, but I also purchased some. Of course, you can just buy everything and put it all together. Whichever way works best for you to help create this fun tin, I’m sure will end up being a hit.
Creating The Tin
There are different ways to go about creating a cookie tin. You can find a tin you love and then decide on what you want to add to it. A bigger tin may have more cookies and treats, where as a smaller tin would have maybe one cookie and a few other items that strike your fancy. You can use a sturdy box instead of a tin. A recycled tin from prior years treats or cookies also works.Â
You will need to consider whether or not your shipping your box on what you decide to use. If your dropping the tin off to a friend or neighbor, or you plan on using it for a party or guests, then it doesn’t need to be as sturdy as if you plan on shipping it. So keep that in mind when your selecting the box.
If Your Shipping The Tin
If you plan on shipping your tin, make sure it has sturdy sides. I also recommend placing the tin in a shipping box surrounded with bubble wrap or packing paper of some sort. This will help guarantee it doesn’t shift during transport.
I also like to put the cookies in smaller tins or containers within the original tin to help keep them more secure. Some fancy shredded paper in between all the items helps it to still look festive but also protects the items from being smushed and broken.
What's In My Tin
I baked three types of cookies for this tin. You can bake as many as you like. If you make a huge batch of cookies you can divide them among other tins and can have a bunch of gifts ready to go really easily. Remember, some baked and some purchased is what makes this work.
The first cookie I baked is my favorite chocolate chip cookie recipe. I discovered it several years ago on the Smitten Kitchen website. What I love about this recipe is that, even though the original recipe is made using regular all-purpose flour, it works really well with gluten-free flour. So you can choose which flour to use based on allergy restrictions.

GF Chocolate Crinkle Cookie
I love a chocolate crinkle cookie and this one is really simple and easy to make. You can make it using regular ap flour or gf flour, and I promise if you use gf flour you will not tell the difference. Here is the recipe:
GF Chocolate Crinkle Cookie
1/2 cup butter
3 (1-oz) unsweetened chocolate squares
2 cups sugar
2 cups GF or AP flourÂ
1/2 tsp Xanthan Gum ( only if using GF flour that does not have it already in the ingredients).
2 tsp Baking powder
3 large eggs, lightly beaten
2 tsp vanilla extract
3/4 cup powdered sugar

Melt butter and chocolate in a heavy saucepan over low heat.
Combine 2 cups of sugar, flour, (xanthum gum if needed), and baking powder in a large mixing bowl. Add chocolate mixture, eggs, and vanilla; beat at medium speed with a mixer until blended. (Mixture will be thin).Â
 Cover and chill at least 2 hours.
Remove from refrigerator and pre-heat oven to 375 F.
While oven is pre-heating shape dough into 1-inch balls and roll them into powdered sugar. Â
Place 2 inches apart on lightly greased or parchment lined baking sheet.
Bake for approx 10 min.
Remove to wire racks to cool.

Chocolate Chip Shortbread Cookie with Chocolate Drizzle
The next cookie I baked had a shortbread base so it was truly buttery goodness. The recipe for that is here:
Chocolate Chip Shortbread Cookie with Chocolate Drizzle
1 cup of butter, softened
1/2 cup of sugar
1/4 tsp of vanilla extract
2 1/4 cups of GF or AP flour
1/2 tsp Xanthan Gum (Only if using GF flour that doesn’t have it in it’s ingredients).
1/8 tsp slt
1/2 cup mini choc chips
Beat butter at medium speed until light and creamy, gradually add sugar, beating well. Stir in the vanilla.
In a seperate bowl, combine flour, (Xanthan Gum if needed) and salt and mix well. Gradually add to the butter mixture, beating at low speed until mixed.
Stir in mini chocolate chips.
Roll out the dough to 1/2″ thickness on a lightly floured surface and using a cookie cutter, cut into desired shape. Â
Place 2″ apart on ungreased baking sheet.
Bake at 275 F for 50 min. Cool for 2 min on baking sheet, then transfer to cooling rack and cool completely.
Chocolate Glaze
6 oz of semi-sweet or milk chocolate chips
Place chocolate in a microwave safe bowl and heat in 15 second intervals until melted and creamy. Dip or drizzle onto cookie. Let cool.
Other Items In My Tin
Mug filled with hot cocoa mix. I had a large batch of hot cocoa mix, I just divided it up in a clear gift bag, added min choc chips and marshmallows.
A small jar I had that I refilled with Trader Joe’s Chocolate Covered Sea Salt Butterscotch Caramels,Â
Trader Joe’s Chocolate Covered Espresso Beans were scattered around.
